Banana Oatmeal Microwave Muffin

Serves: 1  |  1 serving: 274
Prep Time: 5 minutes  |  Cook Time: 2-3 minutes (depending on microwave)


  • 1/4 cup oats
  • 1/2 ripe banana, mashed
  • 1 large egg white
  • 1 tablespoon sugar free maple syrup
  • 1/4 teaspoon baking powder


  1. Cover the inside of a ramekin with cooking spray.
  2. Stir all ingredients together and pour into ramekin.
  3. Cook in microwave for 2-3 minutes (depending on microwave). I did 2:30
  4. Transfer muffin to a plate and let cool.
  5. Eat by itself or top with syrup, nut butter, fruit, or any other of your favorite toppings!
